Description
Vinification
Après une vendange manuelle, on fait le triage et la sélection des meilleures grappes. Les grappes qui manquent de maturité ou qui sont abîmées (botrytis) sont systématiquement séparées et détruites. Ainsi, seules les meilleures grappes sont mises en cuve pour la vinification. Celle-ci d'une durée de 12 à 15 jours à température contrôlée avec 1 à 2 pigeage par jour. Quand la vinification est terminée, le vin est mis en cuve à reposer quelques jours.
Accompagnement
Il accompagne très bien les viandes rouges, le gibier et les fromages affinés.
